Easy recipe of Paalak Paneer (Indian Cottage cheese immersed in goodness of rich spinach gravy).
I'd like to dedicate this recipe to my dear friend Neha, whose adventurous attempt at crafting Paalak Paneer inspired me to share this delightful dish. We've all had those kitchen moments, and Neha's experience sparked the idea of bringing you my take on Paalak Paneer.
Moreover, this dish holds a special place in my heart as it's a cherished favorite of my son. Paneer has an undeniable charm for kids, but when it's embraced by the vibrant goodness of spinach gravy, it truly becomes a heavenly treat. Ingredients
  

  • 200 gms Paneer (Indian Cottage cheese)
  • 3 Tbspn Oil
  • 2 bunches Spinach (Paalak)
  • 1 medium Onion
  • 1 small Tomato
  • 1 inch Ginger
  • 4-5 cloves Garlic
  • 4-5 pieces Green Chillies
  • 2 pieces Cloves
  • 2 sticks Cinnamon Sticks
  • 2 pieces Green Cardamom
  • 1 Tspn Coriander-Jeera powder
  • 1 Tspn Red chilli powder
  • 2 Tbspn Cashews
  • Salt To taste
  • cream To garnish

Instructions
 

  • Gather ingredients as per the list.

Blanch Spinach

  • Add washed spinach leaves in boiling water, leave for few seconds. Remove and put it in cold water bath.
  • Leave spinach leaves to cool in water bath and once cold, prepare spinach puree.

Prepare Gravy base:

  • Heat oil in a pan.
  • Add cloves, cinnamon and cardamom and cook for few secs.
  • Add ginger, garlic and green chilies and cook for few secs.
  • Add onion and cook until translucent.
  • Add tomatoes.
  • Cook until the oil oozes out (this will, indicate that tomatoes are cooked).
  • Add cashews and salt.
  • Cover and cook until cashews turn tender.
  • Turn off the flame and let the mixture cool down.

Assembling the final dish

  • Make Onion tomatoes & other spices puree and the puree of blanched spinach.
  • Heat oil in a pan.
  • Add onion-tomatoes & other spices puree and cook for few seconds. We do not need to cook more as the mixture was pre-cooked.
  • Add spinach puree.
  • Add coriander-jeera powder and red chili powder. Cook for few mins.
  • Add paneer and mix gently. Let it cook for few minutes so that paneer can absorb flavors.
  • Add cream, cover and simmer for few mins.
  • Paalak Paneer is ready to be served.
  • Serve it with paratha or naan of your choice.
