Materials
Spinach Rice
- 1 Tbspn Olive Oil
- 1 Tbspn Minced garlic
- 1 Cup Long grain rice, boiled
- 2-4 piece Green chillies Adjust chili quantity to suit your taste.
- 3/4 Cup Spinach Puree Prepared by blanching spinach and green chilis together
- Salt to taste
Sauté Vegetables
- 2 Tbspn Olive oil
- 1 Tbspn Minced garlic
- 3 Tbspn Green bell pepper
- 3 Tbspn Red bell pepper
- 3 Tbspn Yellow bell pepper
- 4 Tbspn Onion (I like using white onion for this recipe)
- 3 Tbspn Corn
- 1 Tspn Peppercorn powder
- 1 Tspn Dry Oregano herb
- 2 Tspn Mixed Italian herbs
- Salt to taste
White Sauce
- 2 Tbspn Butter
- 2 Tbspn Minced garlic
- 2 Tbspn APF (all purpose flour)
- 100+100 ml Water + Milk
- 1 Tspn Peppercorn powder
- 2 Tspn Dry Oregano
- 2 Tspn Mixed Italian herbs
- 3 Tbspn Grated cheese You can use Cheese of your choice
- Salt to taste
Final assembly
- 150-200 GMs Grated Cheese
- 2 Tspn Mixed italian herbs
Instructions
Spinach Rice
- Gather the required ingredients.
- Heat oil in a pan.
- Add minced garlic.
- Once garlic is cooked for few secs, add Spinach puree
- Simmer Spinach puree for few mins
- Add salt and mix well
- Add boiled rice prepared earlier and mix well.
- Keep the Spinach rice aside and go to next step.
Sauté Vegetables
- Gather the Ingredients.
- Heat oil in a pan
- Add minced garlic
- Once garlic is cooked a little, add all the vegetables and mix well.
- Add herbs & salt and mix well.
- Keep the prepared vegetables aside and go to the next step.
White Sauce
- Gather the ingredients.
- Heat butter in a pan.
- Once the butter is heated, add minced garlic.
- Once garlic is cooked add APF and stir well and continuously.
- Once APF is cooked (it will start changing color a little), star adding milk + water mixture, while continuously whisking to avoid lump formation.
- Let the mixture simmer for few mins. The sauce will thicken up as it simmers.
- Add herbs, salt, grated cheese and mix well.
- Once Mixture turns a little thick after cooking, add the vegetables prepared in the previous step to this white sauce and mix well.
- Let the vegetables and White sauce cook together for a few mins so that the taste can incorporate. This mixture is called Vegetable Au Gratin.
Final assembly
- Take a baking dish. Glass dish is preferred.
- Add the Spinach rice at the bottom to make even layer.
- Add vegetable Au Gratin as second layer on top of the rice.
- Cover the top layer with grated cheese.
- Sprinkle mixed herbs on top of the cheese.
- Bake in preheated oven @ 350 F / 176 C for about 35-45 mins. Baking time will depend on the oven used, please keep an eye on the dish after 25 mins of baking.Check if the top cheese layer turns brown and little crusty.
- Take the dish out of the oven and serve.
- Enjoy the delicacy with chilled wine or juice.
