Spinach Soup
Healthy Soup packed with high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron, and calcium.
Ingredients
Spinach Puree
- 1 Bunch (approx. 3 cups) Spinach
- 1 Count Onion medium size
- 2 Tbspn Olive oil
- 2 Cups Water
- Salt To Taste
White Sauce
- 1 & 1/2 Tbspn Butter
- 1 Tbspn All Purpose Flour (APF) / Maida
- 4 Cloves Minced Garlic
- 250 ml Milk + Water (Equal quantity)
- 1 Tspn Pepper Powder
- 3 Tbspn Parmesan Cheese Powder You can use any other grated cheese available at home as substitute or completely skip it if you do not have it
- Salt To Taste
Instructions
Spinach Puree:
- Gather ingredients for spinach puree
- Heat oil in a pan
- Once oil is heated, add onions and cook the onions until they turn translucent.
- Once the onions turn translucent, add chopped spinach.
- Mix spinach with onions.
- Add water.
- Let the mixture boil for about 5 mins on high flame.
- Let the spinach mixture cool down for 15 minutes. In the mean while let us work on making white sauce.
- After the spinach mixture cools down, add it to mixture grinder to make a puree.
White Sauce
- Heat butter in a pan on low heat.
- Once the butter is heated, add minced garlic and roast the garlic until you get aroma of garlic, and it changes color slightly.
- Once the garlic is roasted, add flour and roast the flour until the color changes slightly.
- After the flour is roasted, add milk and water mixture. Continuously whisk the mixture to make sure there is no lump formation.
- Bring the mixture to a boil while whisking in between.
- Add salt.
- Add pepper powder.
- Add parmesan cheese powder.
- Keep whisking to avoid any lump formation and get homogeneous mixture. Once the sauce becomes thick in texture, turn off the flame.
Assembly of Soup
- Take the spinach puree in one pan. Heat up the pan and let the mixture start simmering.
- Add the white sauce prepared to this spinach puree and let it come to boil.
- Add salt. Please ensure to taste the salt before adding, as we have added salt in white sauce as well.
- Our creamy, healthy spinach soup is now ready.
- You can serve this soup before meals, have it as a meal by itself. You can also serve this with garlic toast or plain bread toast.
