Rava Idly
Delicious Healthy Breakfast recipe
Ingredients
- 3 Cups Rava / Sooji
- 2 Tbspn Chana dal
- 2 Tbspn Urad dal
- 1 Tbspn Rai / Mustard Seeds
- 1 Tspn Peppercorns
- 3/4 Cup Finely Chopped Onions
- 1/2 Cup Finely Chopped Carrots
- 1/2 Cup Green peas
- 1/4 Cup Oil
- 700-850 ml Sour Butter milk
- 1 Tbspn Baking Soda
- Salt To Taste
Instructions
- Heat Oil in Pan (Cook on low flame)
- Add Chana Dal and let it roast for few mins.
- Add Urad dal and let it roast for few mins.
- Once Dals are roasted add Mustard seeds
- once mustard seeds starts popping, add Carrots and cook for few mins but make sure it does not become tender. The crunch in the carrots will enhance the flavour of idly.
- Once Carrots are little cooked, add Onions and cook for few mins.
- Add Rava / Sooji and continue roasting Sooji until we get aroma of the roasted Sooji. TIP: The color of Sooji will change a little to yellowish once it is cooked.
- At this stage add green peas and roast for few secs .
- Turn off the flame and let the mixture cool for some time.
- Once the mixture cools down, start adding sour buttermilk to the mixture little at a time and keep mixing until we get the batter to dropping consistency.
- Add peppercorns and let the mixture rest for about an hour.
- After one hour, the Sooji would have absorbed a lot of buttermilk and hence it would result in the batter turning dry.
- Add more buttermilk to bring the mixture back to dropping consistency.
- Leave the mixture to rest for about 10-12 hours for fermentation
- After fermenting the batter, add salt and Baking Soda and we are ready to steam the Rava Idly.
- Grease the Idly tray and fill the batter in each section up to 3/4 capacity.
- Steam the Idly for about 20 mins.
- TIP: After 20 mins, pierce a knife or toothpick in idly to check if it is cooked.
